Gourmet Pizza' s Production Supervisor Jorge Carrizales
proudly presents a sample of the high-quality, handmade
pizza crust he and his team produce for Colors’ customers.
Colors’
gourmet pizza crusts are hand pushed in pizza pans, then
hand dimpled. The dimples assure that your toppings remain
evenly distributed and trap the sauce. This gives each bite
a different amount of sauce-to-crust ratio, and the result
is a distinct taste profile. The dimples also assure the
crusts retain the wonderful and unique texture of Colors
Pizza Crusts. We par-bake our crusts in conveyor-type Impinger
ovens. This process retains more moisture that results in
a soft product that works well in any kind of oven. The
crust can withstand a longer final bake time and is "forgiving" when
baking times are not precise. We brush all our crusts (except
the Stone Deck Crust) with a tomato-water solution, which
adds a light red hue and speeds up the browning during the
final baking, so you may present to your guests the perfect
pizza that looks as superb as it tastes.
California Style Crust
Colors'
California crusts Our most popular product, the California
Style Crust has Colors’ distinctive hand-shaped raised
edge that we pioneered and has become a hallmark in the industry.
The raised edge provides a guide for your chef when topping
the pizza crust and gives a non-mass-produced look to your
pizza. The fluffy bottom and raised edge also help in keeping
the pizza hot in the room service or buffet environment. |

Flatbread
Style Crust
Flatbread Style Crust is made from the same dough and hand
pushed in the same fashion as our California Style Crust,
but without the raised edge. Instead, we provide a slightly
thicker border, also as a guide, that allows the chef to prepare
a slightly different version to match customer preferences.
Because the edge is lower than on the California Style Crust,
this product can also be used in a salamander or cheese-melter
if no oven is available. |

Ultrathin
Flatbread Style Crust
This thinner version of our Flatbread Style Crust is also
hand pushed and dimpled, but without a raised edge. This allows
edge-to-edge toppings and works well with specialty ovens,
such as TurboChef, and also with your grill, salamander or
cheese-melter in poolside grills or deli environments. With
its light texture, this crust works great for non-traditional
pizza, allowing you to marry exotic toppings and flavors.

Stone Deck
Crust
The Stone Deck Crust, our latest addition,
was designed for wood burning or traditional deck ovens.
We par-bake this crust longer than our other crusts and at
a lower temperature, which allows the final bake to be performed
at high temperature without burning the pizza.

Note: Most of
our pizza crust styles come in 6, 8, 10, 12, 14, 16 and 18
inches. They can also be made with herbs and from whole wheat
flour. For large production, if you are looking for something
different, Colors welcomes the opportunity to work with you
to develop unique specialty items to "wow" your
customers.
